ABSTRACT

Reducir, reutilizar y reciclar, "regla de las tres R", son estrategias que promueven una actitud responsable hacia el medioambiente y contribuyen al desarrollo sostenible. El objetivo de esta revisión fue analizar las publicaciones científicas generadas en Chile en el área de las pérdidas y desperdicios de alimentos (PDA), con enfoque en su cuantificación y basadas en "la regla de las tres R". Se realizó una búsqueda de literatura en tres bases de datos: Web of Science, Pubmed y Scopus. Los artículos originales seleccionados se clasificaron según tipo de acción, etapa de la cadena de suministro de alimentos, grupo de alimentos, cuantificación de PDA y tipo de estrategia (reducción, reutilización o reciclaje). Se encontraron 5 artículos de revisión y 31 artículos originales. La revalorización de subproductos agroindustriales fue la principal acción involucrada en los estudios de PDA (n= 22). El tipo de subproducto también fue analizado, y se encontró que los compuestos fenólicos provenientes de frutales son los más estudiados. Solo el 32% (12/31) de los artículos reportaron información sobre cuantificación de PDA. La revalorización de subproductos sumada a la recuperación de alimentos para producción de energía (n= 4) y de compostaje (n= 2) hacen que el reciclaje sea la estrategia más investigada. Estos antecedentes evidencian la necesidad de complementar la investigación nacional a nivel de acciones que apunten más hacia la reducción y reutilización de PDA y su cuantificación. Este conocimiento permitirá establecer líneas base y planes de monitoreo que contribuyan al cumplimiento de los Objetivos de Desarrollo Sostenible en Chile.


Reduce, reuse, and recycle "the 3Rs rule" are strategies that promote a responsible attitude towards the environment and contribute to sustainable development. The objective of this review was to analyze the scientific publications generated in Chile in the area of food loss and waste (FLW), with a focus on its quantification and based on "the 3Rs rule". A literature search was carried out in three databases: Web of Science, Pubmed, and Scopus. The selected original articles were classified according to the type of action, stage of the food supply chain, food group, FLW quantification, and type of strategy (reduction, reuse, or recycling). Five review articles and 31 original articles were found. The revalorization of agro-industrial by-products was the main initiative involved in the FLW studies (n= 22). The type of by-product was also analyzed, and it was found that the phenolic compounds from fruits are the most studied. Only 32% (12/31) of the articles reported information on FLW quantification. The revalorization of by-products added to food recovery for energy production (n= 4) and composting (n= 2) make recycling the most researched strategy. These antecedents show the need to complement the national research at the level of actions that point more towards reducing and reusing of FLW and its quantification. This knowledge will allow the establishment of baselines and monitoring plans that contribute to the fulfillment of the Sustainable Development Goals in Chile.

ABSTRACT

Background: Brewer ́s spent grain (BSG) is a biomass by-product generated in large volumes during industrial beer production. BSG has become a growing environmental problem, as most breweries discard it inappropriately, negatively impacting the environment. Alternatives for the exploitation of this by-product have consisted of elaborating food supplements for farm animals, obtaining biofuels, developing adsorbents, and obtaining substances for the food industry. However, the high moisture content in BSG (approximately 70%), poses a significant challenge in exploring various reuse alternatives. Therefore, the implementation of a pre-drying process becomes essential. Objective: This study aimed to analyze the BSG drying kinetics at different temperatures and the effect of the drying temperature on the physical properties and the content of bioactive compounds. Methods: BSG samples were dried at different temperatures (50, 60, 70, 80, 90, and 105°C) and analyzed for their moisture ratio, water activity, total polyphenol content (TPC), and DPPH (1,1-diphenyl-2-picrylhydrazil) radical scavenging activity. Antecedentes: El Bagazo residual de malta (BSG por sus siglas en inglés) es un subproducto biomásico generado en grandes volúmenes durante la producción industrial de cerveza. El BSG se ha convertido en un creciente problema para el medio ambiente, debido a que la mayoría de las cervecerías descartan inapropiadamente este residuo generando un impacto negativo al ambiente. Las alternativas para el aprovechamiento de este subproducto han consistido especialmente en la elaboración de suplementos alimenticios para animales de granja, obtención de biocombustibles, desarrollo de adsorbentes y obtención de productos para la industria alimentaria. Sin embargo, el alto contenido de humedad (~70%) del BSG representa un reto para el desarrollo de diferentes alternativas de reutilización, por lo que se hace necesario un proceso de secado previo. Objetivos: En este estudio se analizó la cinética de secado del BSG a diferentes temperaturas y el efecto de la temperatura de secado sobre sus propiedades físicas y contenido de compuestos bioactivos. Métodos: Las muestras de BSG fueron secadas a diferentes temperaturas (50, 60, 70, 80, 90 y 105°C) y analizadas en términos de razón de humedad, actividad acuosa, contenido de polifenoles totales (TPC) y actividad secuestradora del radical DPPH. ABSTRACT

Background The concentrations of disinfection by-products (DBPs) are varied by different water sources, disinfectants, or treatment processes in Wuxi, and the associated health risks are also different. Objective To understand the levels of trihalomethanes (THMs) and haloacetamides (HAcAms) in drinking water in Wuxi, and their variations by water sources, seasons, disinfectants or treatment processes, aiming to provide technical support for ensuring the safety of drinking water. Methods In dry period (December 2019) and wet period (July 2020), the finished water and tap water (from the beginning, middle, and end of the drinking water distribution network) from 12 centralized water treatment plants in Wuxi were collected to detect the concentrations of THMs and HAcAms in water samples. A purge and trap-gas chromatography-mass spectrometry method was applied to detect trichloromethane (TCM), bromodichloromethane (BDCM), dibromochloromethane (DBCM), and tribromomethane (TBM), and a solid-phase extraction-gas chromatography-mass spectrometry method to detect dichloroacetamide (DCAcAm), trichloroacetamide (TCAcAm), bromochloroacetamide (BCAcAm), dibromoacetamide (DBAcAm), bromodichloroacetamide (BDCAcAm), dibromochloroacetamide (DBCAcAm), and tribromoacetamide (TBAcAm). Analyses and comparisons were made on the concentrations of THMs and HAcAms in drinking water by water sources (the Yangtze River/the Taihu Lake/reservoir), wet/dry seasons, disinfection methods (liquid chlorine/sodium hypochlorite), and treatment processes (conventional treatment/conventional+advanced treatment). Results A total of 96 drinking water samples were collected in Wuxi. THMs were positive in all the water samples (100%), with concentration ranging from 1.027 to 40.225 μg·L−1 and the M (P25, P75) concentration being 24.782 (17.784, 30.932) μg·L−1. None of the 4 THMs exceeded the standard limit of the Standards for drinking water quality (GB 5749-2022 ), and the order of the 4 THMs concentrations from high to low was TCM > BDCM > DBCM > TBM. Five of the 7 HAcAms were detected, the total concentration ranged from 0.137 to 3.288 μg·L−1, and the M (P25, P75) was 0.808 (0.482, 1.704) μg·L−1. The DCAcAm concentration was the highest (2.448 μg·L−1), followed by BCAcAm, while TCAcAm and DBCAcAm were not detected. The M (P25, P75) of the total concentration of THMs in the drinking water from the Taihu Lake was 33.353 (26.649, 36.217) μg·L−1, that of the Yangtze River was 27.448 (24.312, 31.393) μg·L−1, and both were higher than the level of the reservoir [16.359 (2.305, 21.553) μg·L−1] (P<0.05), while the M (P25, P75) of the total concentration of HAcAms in the drinking water from the Taihu Lake was 0.616 (0.363, 0.718) μg·L−1, which was lower than those of the Yangtze River [0.967 (0.355, 2.283) μg·L−1] and the reservoir [1.071 (0.686, 1.828) μg·L−1] (P<0.05). There were no statistically significant differences in the total concentrations of THMs and HAcAms between wet season and dry season, or between different disinfection methods (P>0.05). The M (P25, P75) concentrations of THMs and HAcAms in drinking water after advanced treatment process involving ozone, activated carbon, and membrane were 20.565 (3.316, 27.185) μg·L−1 and 0.623 (0.452, 1.286) μg·L−1 respectively, and were lower than the corresponding values after conventional treatment process, 28.740 (23.431, 35.085) μg·L−1 and 0.934 (0.490, 2.116) μg·L−1 respectively (P<0.05). Conclusion The concentrations of THMs and HAcAms in drinking water in Wuxi are generally at a low level. The levels of controlled THMs meet the requirements of national standards, and the levels of uncontrolled HAcAms as new DBPs are up to μg·L−1. The concentrations of the two kinds of DBPs in drinking water vary by water sources. The concentrations of THMs and HAcAms produced by the advanced treatment process are lower than that by the conventional treatment process.

The growth of aquaculture sector is strongly dependent upon the continuous supply of inexpensive fish feed with balanced nutritional profile. However, fish meal (FM) is unable to satisfy this demand due to its scarce supply and high cost. In order to test the potential of cottonseed meal (CSM) as a fish meal replacer, a feeding trial of 12 weeks was conducted to check growth performance and proximate composition of Labeo rohita fingerlings. The protein ration of the test feed was satisfied by replacing FM with CSM at 0, 25, 50 and 75%. Sixteen test diets viz., TD1 (control), TD2, TD3, TD4, TD5, TD6, TD7, TD8, TD9, TD10, TD11, TD12, TD13, TD14, TD15 and TD16 were supplemented with citric acid (CA; 0 and 2.5%) and phytase (PHY; 0 and 750 FTU/kg) in a completely randomized design with 3×3 factorial arrangement. The highest weight gain (11.03g), weight gain% (249.21%), specific growth rate (1.39) and best feed conversion ratio (1.20) were recorded by fish fed with TD12. Furthermore, the same level increased the crude protein (59.26%) and fat (16.04%) being significantly different (p<0.05) than that of control. Conclusively, the addition of acidified phytase (CA; 2.5%, PHY; 750 FTU/kg) in TD12 (CSM=50%) led to the improved growth and proximate composition of L. rohita fingerlings.


O crescimento do setor de aquicultura é fortemente dependente do fornecimento contínuo de rações baratas para peixes com perfil nutricional equilibrado. Porém, a farinha de peixe (FM) não consegue atender a essa demanda devido à sua escassa oferta e alto custo. Com o objetivo de testar o potencial da farinha de semente de canola (MSC) como substituto da farinha de peixe, um ensaio alimentar de 12 semanas foi conduzido para verificar o desempenho de crescimento e a composição centesimal de alevinos de Labeo rohita. A ração de proteína da ração teste foi satisfeita substituindo FM por CSM em 0, 25, 50 e 75%. Dezesseis dietas de teste, viz., TD1 (controle), TD2, TD3, TD4, TD5, TD6, TD7, TD8, TD9, TD10, TD11, TD12, TD13, TD14, TD15 e TD16 foram suplementadas com ácido cítrico (CA; 0 e 2,5%) e fitase (PHY; 0 e 750 FTU / kg) em um delineamento inteiramente casualizado com arranjo fatorial 3 × 3. O maior ganho de peso (11,03g), % de ganho de peso (249,21%), taxa de crescimento específico (1,39) e melhor taxa de conversão alimentar (1,20) foram registrados por peixes alimentados com TD12. RESUMEN Antecedentes: La enfermedad por hígado graso no alcohólico (EHGNA) tiene una elevada prevalencia a nivel mundial, y puede ir desde la esteatosis simple hasta hepatocarcinoma. Su origen es multifactorial, siendo la dieta poco saludable un factor clave en su patogenia y progresión. Los polifenoles son antioxidantes que han mostrado beneficios en el tratamiento de la EHGNA. Una fuente emergente de estos compuestos son los residuos agroindustriales, entre ellos, la cáscara de granada. La cáscara de granada tiene un alto contenido de polifenoles, específicamente de elagitaninos. Su extracto fenólico (extracto de cáscara de granada; ECG) ha mostrado efectos promisorios a nivel metabólico. Sin embargo, su uso presenta algunas limitantes que deben ser consideradas antes de recomendar su ingesta mediante alimentos funcionales o nutracéuticos para prevención o tratamiento de EHGNA. Objetivo: Discutir a partir de datos obtenidos en estudios in vitro y modelos animales, el potencial terapéutico de los polifenoles obtenidos de la cáscara de granada para prevención y tratamiento de la EHGNA. Metodología: Se realizó una búsqueda bibliográfica en bases de datos PubMed y Web of Science (2015 a la fecha) de estudios en modelos de esteatosis hepática in vitro y en animales, además de ensayos clínicos relacionados. Conclusión: Existen datos promisorios sobre el uso del ECG en alteraciones metabólicas propias de la EHGNA y esteatosis hepática, principalmente a nivel de perfil lipídico. Se deben discutir las dosis y formas de administración, con el fin de mejorar su estabilidad y biodisponibilidad. Se requieren ensayos clínicos controlados que confirmen los efectos en humanos.


ABSTRACT Background: Nonalcoholic fatty liver disease (NAFLD) has a high prevalence worldwide and can range from simple steatosis to hepatocarcinoma. Its causes are multifactorial, with an unhealthy diet being a key factor in its pathogenesis and progression. Polyphenols are antioxidants that have shown benefits in treating NAFLD. An emerging source of these compounds is agro-industrial by-products, including pomegranate peels. Pomegranate peels are high in polyphenols, specifically ellagitannins. Its polyphenolic extract (PPE) has shown promising metabolic benefits. However, its use has some limitations that must be considered before recommending its intake through functional foods or nutraceuticals to prevent or treat NAFLD. Objective: This article aims to discuss, using results from in vitro studies and animal models, the therapeutic potential of polyphenols obtained from pomegranate peels to prevent and treat NAFLD. Methods: A bibliographic search was carried out in PubMed and Web of Science databases (2015 to date) of in vitro and animal model studies of hepatic steatosis, in addition to related clinical trials. Conclusion: There are promising data on the use of PPE in metabolic disorders typical of NAFLD and hepatic steatosis, mainly improving lipid profile. Doses and vehicles of administration should be discussed to improve stability and bioavailability. Controlled clinical trials are required to confirm the effects in humans.

RESUMEN En la industria acuícola, se vienen desarrollando acciones encaminadas a buscar fuentes proteicas alternativas palatables y de alto valor biológico para reemplazar las fuentes convencionales. Debido al potencial nutricional de los subproductos animales, se han adoptado tecnologías para su uso, como las técnicas de bioconversión por hidrólisis enzimática. En consecuencia, el objetivo de este estudio fue obtener y evaluar un concentrado de proteína hidrolizada de residuos animales (CPHRA) como alternativa en dietas para Piaractus brachypomus. Las vísceras de los subproductos avícolas se evaluaron utilizando ácido fórmico y vísceras de trucha al 20% para promover la hidrólisis enzimática a un pH más bajo (pH 3,66). El producto resultante se utilizó en la formulación de dietas para determinar coeficiente de digestibilidad aparente (CDA) de energía y nutrientes, utilizando una dieta control () y tres dietas con inclusión de 10%, 20% y 30% de CPHRA (T1, T2 y T3). Se alimentaron por triplicado ciento veinte juveniles de híbridos de cachama blanca con un peso promedio de 145 ± 3,0 g. La CPHRA presentó alto contenido proteico y se evidenciaron diferencias significativas (p < 0,05) para los CDA de materia seca, proteína bruta, grasa bruta, energía bruta y absorción de cenizas, calcio y fósforo. Los CDA de nutrientes y energía estaban por encima del 80%. En consecuencia, el concentrado de proteína hidrolizada de los desechos de aves de corral tiene un gran potencial como alternativa proteica y energética de alto valor nutricional en la alimentación de los peces.


ABSTRACT The aquaculture industry aims to find new strategies to replace fishmeal in formulated diet-sources with high attraction and palatability and high biological value to replace conventional sources. Due to the nutritional potential of animal by-products, technologies have been adopted for their use, such as bioconversion techniques by enzymatic hydrolysis. Consequently, the objective of this study was obtaining and evaluating a hydrolyzed protein concentrate of animal waste (CPHRA, by its Spanish acronym) in diets for Piaractus brachypomus. Viscera from poultry by-products was evaluated by using formic acid and a 20% trout viscera to promote the catalyst at lower pH (3,66). The resulting product was used in feed formulation to determine the Apparent Digestibility Coefficient (ADC) of energy and nutrients, using a control diet (T0) and three diets with 10%, 20%, and 30% CPHRA (T1, T2 y T3). One hundred and twenty juveniles of hybrids of cachama blanca with an average weight of 145 ± 3,0 g were fed in triplicate groups. The CPHRA presented high protein content and significant differences (p < 0,05) were evidenced for the ADCs of dry matter, crude protein, crude fat, crude energy, and ash absorption, calcium and phosphorus. The ADCs for nutrients and energy were above 80%. Accordingly, the hydrolyzed protein concentrate from poultry waste has great potential as a protein and energy alternative of high nutritional value in fish feeding.

ABSTRACT

Objective To understand the exposure level of disinfection by-products (DBPs) in drinking water in Xiangyang City and to evaluate the health risks of the population, so as to provide reference for the safety risk control of drinking water. Methods Sampling and laboratory testing were conducted according to national standard methods. The risk assessment model provided by USEPA was used to evaluate the health risks. Results Trichloromethane (TCM), bromodichloromethane (BDCM), dibromochloromethane (DBCM) and tribromomethane (TBM) were detected in drinking water in Xiangyang City. The contents of halogenated hydrocarbon DBPs in water disinfected with liquid chlorine were higher than those with chlorine dioxide. The contents of three DBPs were higher in wet season than those in dry season except TBM. The content of TCM in pipe network terminal water and secondary water supply disinfected with chlorine dioxide was higher than that in factory water. The carcinogenic risk of DBPs in drinking water disinfected with liquid chlorine was 4.33×10-5, and the non-carcinogenic risk was 0.114. The carcinogenic risk of DBPs in drinking water disinfected with chlorine dioxide was 1.24×10-6, and the non-carcinogenic risk was 3.15×10-3. Conclusion The health risk of DBPs in drinking water in Xiangyang City is acceptable, but TCM produced by liquid chlorine disinfection should be paid more attention. It is recommended that chlorine dioxide disinfection be used to reduce the health risks of halogenated hydrocarbon DBPs.

As a traditional Chinese medicine, Ziziphi Spinosae Semen (ZSS) has the functions of tonifying liver, tranquilizing heart, astringent sweat and producing body fluid, which is used to treat neurasthenia, insomnia, dreaminess, debility, night sweat and so on. With the rapid and constant development of ZSS resource industry and its medicinal value, a large number of by-products and waste generated in the production and processing process, resulting in serious environmental problems. In general, the utilization rate of ZSS resources was still not high. Based on this, the chemical components and potential resources of ZSS were systematically combed from the perspective of the medicinal parts and bioactive components in this paper, and the authors had summarized that the widely application of ZSS and its by-products (fruit, leaf, root, etc.) in the fields of food, medicine, functional food and other areas was discovered and summarized as feed, feed additives, activated carbon, organic fertilizer, etc. In addition, this paper systematically summarized the current environmental protection problems of the industry, and put forward suggestions for improvement, aiming at reducing environmental pollution and improving the utilization efficiency of resources, so as to provide reference and basis for the comprehensive utilization of ZSS and its by-products, and promote the green, economical and double-effect development of the industry.

ABSTRACT

L-Homoserine is a non-essential amino acid that is often used as an important platform compound and additive in industrial production. To improve the production efficiency, a previously constructed L-homoserine producing strain E. coli H0-0 was used as a chassis for further metabolic modification. Firstly, the ppc and pyccgP458S genes were overexpressed to optimize the Kreb's cycle. Subsequently, thrAC1034T and lysCcgC932T were overexpressed to improve the product synthesis, followed by inactivation of iclR gene to reduce the accumulation of by-products. The introduction of three sucrose metabolism genes, scrA, scrB and scrK, enabled E. coli to ferment sucrose. The titer of L-homoserine increased from 3.2 g/L to 11.1 g/L.

RESUMEN La explotación pesquera, con fines de comercialización y consumo en la Cíenaga de Zapatosa, Cesar, Colombia, genera residuos representados en vísceras y otros subproductos. Se estudió la posibilidad de aprovechamiento de dichas vísceras, para la producción de harina, con fines de alimentación animal. A los subproductos de las seis especies de mayor importancia en la Ciénaga de Zapatosa, se les determinó su composición proximal y se procedió a elaborar la respectiva harina, utilizando una mezcla de las mismas, en proporciones iguales. El producto final fue evaluado, mediante parámetros bromatológicos, microbiológicos y de estabilidad. La harina se elaboró, a través de los procedimientos de cocción, prensado, centrifugación, para la eliminación de grasa y humedad, secado, molienda, empaque y almacenamiento. Los resultados mostraron un alto valor nutricional estable durante el tiempo de medición, lo que la convierte en una opción proteica favorable, para la elaboración de piensos para alimentación animal, debido a su digestibilidad del 80%, su contenido de proteína del 54%, su aporte en ácidos grasos esenciales eicosapentaenoico (EPA), docosapentaenoico (DPA), docosahexaenoico (DHA) y su aporte en aminoácidos esenciales. La harina fue evaluada en la elaboración de alimentos concentrados para alimentación in vivo de pollos de engorde y se incluyó en las dietas, en comparación con piensos comerciales. El resultado mostró un mejor rendimiento productivo, representado en mejor ganancia de peso diario y mejor índice de conversión alimenticia. Se concluyó, que la harina de vísceras de pescado evaluadas son una alternativa importante para la alimentación de pollos de engorde.


ABSTRACT Fishing exploitation, for the purpose of marketing and consumption in the Cíenaga de Zapatosa, Cesar, Colombia, generates a large amount of waste represented in viscera and other by-products. The possibility of using these viscera for the production of flour for animal feed was studied. For the by-products from the six most important fish species in the Cíenaga de Zapatosa, their proximal composition was determined, and the respective flour, using a mixture in equal proportions elaborated evaluated. The final product was evaluated through bromatological, microbiological and stability parameters. The flour was elaborated through the procedures of cooking, pressing, centrifugation for the elimination of fat and humidity, draying, grinding, packaging and storage. The results showed a stable nutritional value during the measurement time, which makes it a favorable protein option for the production of animal feed, due to its digestibility of 80%, its protein content of 54%, its contribution in essential fatty acids eicosapentaenoic (EPA), docosapentaenoic (DPA), docosahexaenoic (DHA) and its contribution in essential amino acids. This flour was evaluated in the preparation of concentrated feeds for in vivo feeding of broilers, compared with commercial feed. The result showed a better productive performance represented in better daily weight gain and better feed conversion index. The results allow to conclude that the meal of fish viscera of the six most commercially important species obtained in the Cíenaga de Zapatosa, are an important alternative for feeding broilers.

Mango is the second most commercialized tropical fruit in the world, and Mexico is the major exporter. In terms of mango production, Manila´s variety represents a quarter of the total mangoes production in Mexico. However, the changes that occur on the phenolic compounds during the Manila mango ripening process are unknown. Quantitative analysis of the major phenolic compounds was conducted at different maturity stages, using several spectrophotometric measurements and by high-performance liquid chromatography (HPLC). At the late ripening stage was observed the biggest content in pulp and peel of total phenols (577 and 10547 mg EAG /100 g), flavonoids (95.33 and 537 mg EQ/100 g), and antioxidant capacity by DPPH (25 and 347 mmol TE/100 g). Some bioactive compounds achieve their highest values at optimal consumption ripening. Although they diminish when the fruit reaches a senescence appearance. This is the first study to prove that mangiferin by itself shows a higher correlation in antioxidant capacity compared to other phenolic compounds in mango peel, and this suggest that phenolic compounds may have an important role in the postharvest antioxidant metabolism in Manila mango fruit. On the other hand, the results show that the peel compared to the pulp contains higher amounts of total phenols, flavonoids, gallic acid, mangiferin and antioxidant capacity, so its use as an ingredient in the preparation of functional food products is recommended. More studies are needed to go in-depth in the changes of the content of phytochemicals during the ripening process in the peel and pulp mango, which ones could be caused by the hormones responsible for ripening in the fruit, such as ethylene, and bioavailability of these compounds at different stages of maturation(AU)


El mango es la segunda fruta tropical más comercializada del mundo y México es el principal exportador. En términos de producción de mango, la variedad Manila representa una cuarta parte de la producción total de mangos en México. Sin embargo, se desconocen los cambios que ocurren en los compuestos fenólicos durante el proceso de maduración del mango Manila. El análisis cuantitativo de los principales compuestos fenólicos se realizó en diferentes etapas de madurez, utilizando varias medidas espectrofotométricas y mediante cromatografía líquida de alta resolución (HPLC). En la etapa de madurez tardía se observó el mayor contenido en pulpa y cáscara de fenoles totales (577 y 10547 mg EAG / 100 g), flavonoides (95.33 y 537 mg EQ / 100 g) y capacidad antioxidante por DPPH (25 y 347 mmol TE / 100 g). Algunos compuestos bioactivos alcanzan sus valores más altos en el punto de madurez óptima. Aunque disminuyen cuando el fruto adquiere una apariencia de senescencia. Este es el primer estudio que demuestra que la mangiferina por sí misma presenta una alta correlación con la capacidad antioxidante en comparación con otros compuestos fenólicos de la cáscara de mango, y esto sugiere que los compuestos fenólicos pueden tener un papel importante en el metabolismo antioxidante postcosecha en el mango Manila. Por otro lado, los resultados muestran que la cáscara comparada con la pulpa contiene mayores cantidades de fenoles totales, flavonoides, ácido gálico, mangiferin y capacidad antioxidante por DPPH, por lo que se recomienda su uso como ingrediente en la elaboración de productos alimenticios fucionales. Se necesitan más estudios para profundizar en los cambios del contenido de fitoquímicos durante el proceso de maduración en la cáscara y pulpa del mango, los cuáles podrían ser provocados por las hormonas responsables de la maduración en el fruto, como el etileno, y la biodisponibilidad de estos compuestos en diferentes etapas de maduración(AU)

RESUMEN Actualmente se generan grandes cantidades de sub-productos agroindustriales como residuos, aun cuando pueden ser fuente importante de variados compuestos antioxidantes. Una de las formas de aprovechar esta funcionalidad es concentrar los antioxidantes mediante la elaboración de extractos, siendo las "extracciones verdes", que usan solventes como agua o etanol, que por ser más amigables con el medio ambiente y la salud humana, han sido las más estudiadas en los últimos años. Sin embargo, uno de los principales problemas de reutilizar este tipo de compuestos bioactivos es mantener su estabilidad, debido a que luego de ser extraídos desde su matriz biológica son muy sensibles a distintas condiciones medioambientales y de almacenamiento. Una tecnología que puede reducir la inestabilidad de los compuestos antioxidantes es la encapsulación, la cual también reduce las alteraciones organolépticas que se pudieran producir cuando son incorporados en alimentos. Según nuestro conocimiento no existen revisiones de encapsulación de extractos de sub-productos agroindustriales (en donde se puede encontrar una gran variedad de compuestos antioxidantes) y la información existente se basa en compuestos antioxidantes específicos encapsulados. Por tanto, el objetivo de esta revisión fue recopilar información actualizada respecto a la encapsulación de extractos antioxidantes obtenidos a partir de sub-productos agroindustriales vegetales y su incorporación como ingredientes en alimentos.


ABSTRACT Currently large quantities of agro-industrial by-products are generated as waste even when they can be used as important sources of various antioxidant compounds. One of the ways to take advantage of this functionality is to concentrate antioxidants via the preparation of extracts. Due to their lower impact on the environment and human health "green extractions" using solvents such as water or alcohol have been the most studied in recent years. However, one of the main problems in re-using these bioactive compounds is maintaining stability after being extracted from their biological matrix. Instability relates to different environmental and storage conditions. One technology that can reduce antioxidants instability is encapsulation, which also reduces organoleptic alterations that could occur when they are incorporated into food. To our knowledge there are no reviews of encapsulation of agroindustry by-product extracts (where a wide variety of antioxidant compounds can be found) and existing information is based on specific encapsulated antioxidant compounds. Therefore, the objective of this review was to gather up-to-date information regarding the encapsulation of antioxidant extracts obtained from vegetable agro-industrial by-products and their incorporation as ingredients in food.

Resumen Introducción: la extracción de los polifenoles ha tomado un interés debido a la relación que tiene con la prevención del estrés oxidativo y efectos benéficos sobre la salud en la prevención de enfermedades no transmisibles; estos están comúnmente en algunas frutas por lo que su extracción se ha convertido en una tendencia para obtener productos de alto valor agregado. El ultrasonido es una técnica que puede disminuir el tiempo de extracción de estos biocomponentes. Objetivo: evaluar las condiciones de la extracción asistida por ultrasonido de polifenoles con actividad antioxidantes en cáscara de pitahaya amarilla deshidratada. Materiales y métodos: Se deshidrataron las cáscaras y construyó cinéticas de secado a 60°C, con el fin de disminuir las reacciones de deterioro. Para la extracción, una solución de etanol al 96% (V/V) fue usada como disolvente, en una relación cáscara-disolvente 1:1. El proceso fue realizado a 25 °C en un sistema de ultrasonido indirecto con una frecuencia de 37 kHz. Se usó un diseño central compuesto, fueron evaluados el efecto de la potencia (40 - 80%) y tiempo de sonicación (11,90 - 33,10 minutos). Se hizo extracción con el método soxhlet (control). Los polifenoles totales y capacidad antioxidantes fue determinado por lo métodos Folin-Ciocalteau y ABTS respectivamente. Resultados: Bajos tiempos y altas potencias de sonicación fueron asociados con incremento en la extracción de polifenoles y capacidad antioxidante. En particular, la extracción asistida con ultrasonido con 60% de potencia y 11 minutos, se obtuvo un 77% más de polifenoles que 24 horas de proceso con método Soxhlet. Conclusión: El ultrasonido tiene potencial en comparación con la técnica tradicional para reducir el tiempo de procesamiento en extracción de biocomponentes, en este caso aprovechar la cáscara de pitahaya amarilla que es considerada como un residuo, se encontraron concentraciones de polifenoles de 973,10 mg/L que pueden ser extraídos por ultrasonido a 222 W de potencia nominal (60%), 35kHz de frecuencia y 22 minutos y con una capacidad antioxidante superior al 90%.


Abstract Introduction: the extraction of polyphenols has taken an interest due to the relationship it has with the prevention of oxidative stress and beneficial effects on health in the prevention of non-communicable diseases. These are commonly found in some fruits, so their extraction has become a trend to obtain products with high added value. Ultrasound is a technique that can decrease the extraction time of these biocomponents. Objective: the main objective of this work was to evaluate the conditions of the ultrasound-assisted extraction of polyphenols with antioxidant activity in dehydrated peel yellow pitahaya. Materials and methods: the kinectis drying was made at 60 °C, in order to decrease deterioration reactions. For the extraction, a solution of 96% ethanol (V / V) was used as disolvent; the ratio Peel-Disolvent was 1:1. The process was performed at 25 °C and 37 kHz frequency. A central composite design was used, in which the effect of power (40 - 80%) and ultrasonication time (11.90 -33.10 minutes) were evaluated. One control point was evaluated with Soxhlet extraction. The extracted amount of polyphenols and antioxidant capacity was determined by Folin-Ciocalteau and ABTS methods, respectively. Results: lower time exposures and higher sonication power were associated with increases in polyphenols and antioxidant capacity. In particular, ultrasound-assisted extraction in 60% power and 11 min, obtained 77% more polyphenols than 24-h standard method (Soxhlet). Conclusion: Ultrasound has potential compared to the traditional technique to reduce the processing time in biocomponent extraction, in this case taking advantage of the yellow pitahaya peel that is considered as a residue, polyphenol concentrations of 973.10 mg / L were found that They can be extracted by ultrasound at 222 W nominal power (60%), 35kHz frequency and 22 minutes and with an antioxidant capacity of over 90%.


Resumo Introdução: Muita atenção tem o efeito benéfico dos polifenóis e antioxidantes na obesidade relacionada ao estresse oxidativo. O ultra-som é uma técnica que pode diminuir o tempo de extração desses biocompostos. A extração de polifenóis interessou-se pela relação que tem com a prevenção do estresse oxidativo e efeitos benéficos à saúde na prevenção de doenças não transmissíveis; como são comumente encontradas em algumas frutas, sua extração tornou-se uma tendência para obter produtos com alto valor agregado. O ultrassom é uma técnica que pode diminuir o tempo de extração desses biocomponentes. Objetivo: foi avaliar as condições da extração assistida por ultrassom de polifenóis com atividade antioxidante em pitaia amarela desidratada. Materiais e métodos: as cascas foram desidratadas e construídas cinéticas de secagem a 60 °C, a fim de diminuir as reações de deterioração. Para extração, utilizou-se uma solução de etanol 96% (V/V) como dissolvente, numa proporção escudo-dissolvente 1:1. O processo foi feito a 25°C e uma frequência de 37 kHz. Foi utilizado μM projeto central composto, avaliando-se o efeito da potência (40-80%) e do tempo de sonificação (11,9-33,1 minutos). A extração foi feita com o método soxhlet (controle). A quantidade de polifenóis e capacidade antioxidantes extraídos foi determinada pelos métodos Folin-Ciocalteau e ABTS, respectivamente. Resultados: os tempos baixos e as altas potências de sonicação foram associados com aumento da extração de polifenóis e antioxidantes. Em particular, a extração assistida com ultra-som ao 60% de potência e 11 minutos, 77% a mais de polifenóis foram obtidos a 24 horas do método soxhlet. Conclusão: Ultra-som tem o potencial comparado à técnica tradicional de reduzir o tempo de processamento na extração de biocomponentes, neste caso, aproveitando a casca de pitaiaiás amarela que é considerada μM resíduo, foram encontradas concentrações de polifenóis de 973,10 mg / L que. ABSTRACT

RESUMO O potencial de formação de trihalometanos (PFTHM) é uma metodologia utilizada para avaliar a possibilidade de formação de subprodutos da desinfecção (SPD) por cloração durante o processo de tratamento da água. Trihalometanos (THM) são compostos organoclorados e representam a soma de clorofórmio, diclorobromometano, dibromoclorometano e bromofórmio, sendo a principal classe de SPD formados a partir da reação entre o cloro residual livre e a matéria orgânica natural (MON) presente na água bruta de mananciais de superfície. Esta pesquisa teve como objetivo avaliar o PFTHM resultante da aplicação de cloro na água bruta da lagoa de Extremoz, cuja tecnologia de tratamento utilizada é a filtração direta, seguida de desinfecção com cloro. Os resultados obtidos indicaram presença de matéria orgânica natural hidrofílica com predominância de ácidos fúlvicos na água bruta do manancial. A concentração média de TTHM7 (4,22 mg.L-1) revelou que a água do manancial possui forte potencialidade para formação de compostos orgânicos halogenados. O clorofórmio representou cerca de 80% da concentração total de THM nos ensaios realizados. Foram observadas correlações fortes e significativas entre as variáveis dureza (R = 0,90 e p = 0,005) e cor aparente (R = -0,93 e p = 0,002) da água bruta, resultados que indicaram que íons Ca2+ e Mg2+ podem promover a formação de THM, assim como a cor aparente.


ABSTRACT Trihalomethanes formation potential (THMFP) has been used to evaluate the possibility of disinfection byproduct (DBP) formation by chlorination during the water treatment process. Trihalomethanes (THM) are organochlorine compounds and represents the sum of chloroform, dichlorobromomethane, dibromochloromethane, and bromoform, and is the main class of DBP formed from the reaction between free residual chlorine and natural organic matter (NOM) present in the source waters of surface fountains. This research evaluates the THMFP on the source water from the Extremoz Pond (Natal-RN, Brazil), which is treated by direct filtration followed by chlorine disinfection. Results indicated the presence on source water of hydrophilic natural organic matter with the predominance of fulvic acids. The mean concentration of TTHM7 (4.22 mg.L-1) showed that the source water has a strong potential for halogenated organic compounds formation. Chloroform represented about 80% of the total THM concentration in the assays performed. Significant and strong correlations were observed between hardness (R = 0.90 and p = 0.005) and apparent color (R = -0.93 and p = 0.002) attesting that Ca2+ and Mg2+ ions can promote the formation of THM, as well as the apparent color.

Chinese medicine resources are national strategic resources, which not only make important contributions to human health, but also provide an important material basis for disease prevention and control of livestock and poultry. With the promulgation and implementation of the policy of banning antibiotics in livestock and poultry feeding products, the development of feeding products that can effectively replace antibiotics has become a research hotspot in the animal husbandry industry. Feeding products with traditional Chinese medicine based on natural plant resources have been recognized as an important direction to realize the replacement of antibiotics in feeding products. In the process of production and industrialization of Chinese medicinal materials, a large number of non-medicinal parts and by-products have not been effectively utilized, which not only causes huge waste of resources, but also exacerbates the pressure of ecological environment. However, modern research has found that most of these unused wastes and by-products are rich in feedable resources with anti-bacterial, anti-inflammatory, digestive-promoting and nutritional functions. In addition, these wastes and by-products exhibit the resource characteristics such as huge reserves and low production costs, and are urgently needed to be disposed. Accordingly, this paper puts forward that non-medicinal parts and by-products produced in the production and industrialization of Chinese medicinal materials are the important raw materials for the development of antibiotic alternative feeding products. Then, the feasibility of this proposal was analyzed, the existing research practices were summarized, and some suggestions for industrial development were proposed, with view to providing support for the improvement of the utilization efficiency and green development of Chinese medicine resources industry, and providing an effective alternative to feeding antibiotics.

Objectives To understand the distribution level and health risk of disinfection by-products of drinking water in cities of China, and to provide references for drinking water safety management. Methods By systematically searching the literatures published from 2009 to 2019, the effective data were extracted and the exposure levels of disinfection by-products of drinking water in China was statistically analyzed. The health risk assessment model recommended by EPA was used to conduct risk assessments on THMs and HAAs disinfection by-products. Results The levels of various disinfection by-products were as follows: trihalomethane > haloacetic acid > haloacetonitrile > chloral hydrate > haloketones > nitrosamines. The main disinfection by-products in drinking water in southern China were higher than those in northern China. The total amount of disinfection by-products produced by liquid chlorine disinfection was higher than other disinfection methods. Conclusion The carcinogenic risk of various disinfection by-products in domestic urban drinking water was higher than the acceptable EPA level (1×10-6 ). Sodium hypochlorite disinfection instead of liquid chlorine disinfection was able to effectively reduce the health risk of disinfection by-products to humans. The health risk of the exposure to pollutants in drinking water was higher in children than in adults, which should be taken into special consideration

ABSTRACT The need to obtain nutritious foods from new sources and lower waste in industry has created a high interest in studying different parts of plants or foods that today are considered waste, but could be considered by-products with high nutritional value with potential use in human diets. Pumpkin seeds are commonly considered as waste but they have a high content of fatty and amino acids, which when used as a by-product or ingredient can add value to food products. The aim of this work was to perform a wide review of the nutritional and functional properties of Cucurbita maxima seeds and their potential medicinal influence.


RESUMEN La necesidad de obtener alimentos nutritivos de nuevas fuentes y menores desperdicios en la industria ha generado un gran interés en el estudio de diferentes partes de plantas o alimentos que hoy en día se consideran desechos, pero que podrían considerarse subproductos con alto valor nutricional y uso potencial en alimentación humana. Las semillas de calabaza se consideran comúnmente como desechos, pero tienen un alto e importante contenido de ácidos grasos y aminoácidos, que cuando se utilizan como subproducto o ingrediente pueden aportar un alto valor agregado a los productos alimenticios. El objetivo de este trabajo es realizar una amplia revisión de las propiedades nutricionales y funcionales de las semillas de Cucurbita maxima y su potencial influencia medicinal asociada a ellas.

ABSTRACT

In fish farming, the use of alternative ingredients has been studied, so that alternative sources can be used to minimize feed costs. This study evaluated the incorporation of grape, orange, guava, and fig residues in diets for silver catfish and its effects on growth, digestive enzymes and body composition. A total of 180 fish (initial mean weight = 22.93±0.75 g) were reared in a recirculation aquaculture system. There was no difference (P>0.05) in the parameters of growth, dry matter, mineral matter, plasma protein, cholesterol, triglycerides, lipase, and trypsin of fish. Glucose levels were higher in fish fed diets containing fig, orange, and grape residue (P<0.05). Lipase activity was higher in fish fed orange residue, compared to guava (P<0.05). Diets containing guava and fig provided more body protein in silver catfish. The fish fed with diet containing orange residue had a higher content of body lipids. It can be concluded that the tested fruit residues can be used in silver catfish feeding.(AU)


Na piscicultura, o uso de ingredientes alternativos vem sendo estudado, de modo que seja possível utilizar fontes alternativas para minimizar custos com a alimentação. Neste estudo, foi avaliada a incorporação de resíduos de uva, laranja, goiaba e figo em rações para jundiá e seus efeitos no crescimento, em enzimas digestivas e na composição corporal. Foram utilizados 180 peixes (peso médio inicial = 22,93±0,75 g), criados em sistema de recirculação. Não houve diferença (P>0,05) nos parâmetros de crescimento, matéria seca, matéria mineral, proteína plasmática, colesterol, triglicerídeos, lipase e tripsina dos peixes. Os níveis de glicose foram maiores nos peixes alimentados com dietas contendo figo, laranja e uva (P<0,05). A atividade de lipase foi maior nos peixes alimentados com resíduo de laranja, comparado com o de goiaba (P<0,05). As dietas contendo goiaba e figo proporcionaram mais proteína corporal nos jundiás. Os jundiás alimentados com dieta contendo resíduo de laranja apresentaram maior teor de lipídeos corporal. Conclui-se que os resíduos de frutas testados podem ser usados na alimentação do jundiá.(AU)
